Best Ever Gluten-free Garlic Bread Sticks

The Recipe:
Bread sticks:
2 ¼ cups warm water
2 tbsp granulated sugar
3 tbsp butter, melted
1 packet instant dry yeast
3 ¾ cups (1- 22oz bag) Gluten-free all purpose flour (1:1)
1 ¾ tsp salt
Topping:
2 tbsp butter, melted
½ tsp salt
½ tsp garlic
+sprinkling of Parmesan on top and bake 2 minutes
Directions:
Mix the yeast together with the butter, warm water, and sugar. Set aside for 5-10 minutes (letting the yeast activate).
After 5-10 minutes, add in the flour and salt. Knead by hand for 7ish minutes.
Proof (let rise) 1 hour & 30 minutes.
After proofing, divide the dough into ¼ cup balls and form into logs. Proof again for about 2 hours.
Bake at 400°F for 12 minutes. Meanwhile, make the butter garlic topping, adding all the topping ingredients together.
Take out of the oven. Brush instantly with butter garlic mix.
If putting parmesan on, then sprinkle parmesan on top of the bread. Bake it in the turned off oven for 2-3 minutes.
